Augustine is the white of Château Auguste, vintage 2023 on the shop. Sauvignon Blanc and Sémillon, with five percent Muscadelle to round the corners without making the wine heavy. The maison’s note is exact and enough: fresh, elegantly grassy, abundantly aromatic. Pear, white peach, fresh almond. Acidity in balance. A finish that stays.

Serve it cold, not frozen. The almond note disappears if the wine is numb. Shellfish, chèvre, and anything with green herbs are the obvious table. It is also the correct aperitif while the rouge opens.
